Partners Jan Willem Pont, Loy Snyman, Graham Pyott, Riann de Villiers and Andreas Heinrich take orders themselves in the time-honoured tradition of hand-written dockets. As they are intimately involved in every aspect of the restaurant, from front-of-house to the kitchen, they are uniquely qualified to discuss the specials, cooking methods and ingredient substitutions. Casual waiting staff is only used to take drinks and dessert orders.
